Jeff Hertzberg shows us how to prepare the dough for the bread and pizza base. Zoe Francois shows us how to use this dough to make a roll up spiral pizza which kids love in their lunch boxes.
Ingredients
Whole wheat – 5 ½ cups
Unbleached flour – 2 cups
Yeast - 1 ½ tbs
Salt – 1 bl
Vital wheat gluten – ¼ cup
Lukewarm water – 4 cups
For making pizza's:
Pizza or pasta sauce
Grated cheese
Method:
•Mix the whole wheat, unbleached flour, yeast, salt and gluten in the a large bowl so that no lumps are formed.
•Add the lukewarm water and mix it into a wet dough.
•Cover the bowl with a lid leaving a small air space. Leave it for 2 hours on the counter and then for 2 weeks in the refrigerator.
•This recipe will make four loaves of bread.
•To make the pizza you need to take the dough from the refrigerator. Take a large ball of dough and using lots of flour (as it is sticky) roll it in to a ball.
•Place it on a flat surface and roll out a rectangular piece using a rolling pin.
•Then spread the pizza or pasta sauce and top it with grated cheese.
•Roll up the dough length-wise and using scissors cut out small square pieces.
•Place it in a baking tray and put it in the over which is preheated to 375 degree and bake it for 10 – 12 minutes.
•When it is done, take it out and your roll up spiral pizza is ready. You can put it on a stick and your kids will love it.
Kids will like this as they love anything that is spiral and is on a stick. Enjoy!
